A Quickie

So here is one that a few friends and myself like to do when short in time and want something quick at the end of s long day. Combine the following ingredients:

1 can more sodium corn (drained and rinsed)
1 can of low sodium black beans (drained and rinsed)
1 small jar of salsa

Mix together and you can store it in the fridge for about 10 days or so.
Come home tired and hungry, shed some lettuce crunch up a few tortilla chips and top with a few heaping spoonfuls (warm or cold). Add to brown rice for yummy fiesta rice.

A thought

So you are trying to eat healthier. Reality...if the food looks appetizing there's a better chance you will eat it.
This is just an ordinary salad.
Lettuce, spinach, celery, cucumbers, carrots, tomatoes, yellow bell peppers.
Sprinkle a scant amount of cheese if wanted and add a spoonful or 2 of garbanzo beans that have been marinating in Italian dressing. Yum!

It's the weekend!

So I am on my way to a 3 year old's birthday party, which is sure to be laden with fried finger foods, pizza and cake.  I have my little baggie with baby carrots as ammunition. As for the cake, a taste isn't going to kill me but my own will power and knowledge is going to stop me from over doing it.  Then to a salad bar for din, where I can pile on the veggies.  Everyone enjoy their weekend. I will be posting new recipes this weekend.

P.S.  Some healthy mom brought salad. Thank goodness

Hello!
     Let me first start by saying this : I am not a doctor or a nutritionist.  I do a lot of reading on homeopathic ways of life and naturalist ways and alternative medicine.  I have had my share and continue to have my share of medical issues like everyone does and decided to take it upon myself to look into alternatives to some of the medicines that have been prescribed (by looking into the other aspects of healing the body).  Part of that process is diet.  Is it right for everyone? No... Everyone is different.  What works for me may not work for the next person but in the process I have learned a lot and if anything I learned could help anyone else then why not share it.
     After a little peer pressure I decided that maybe family and friends were right. My biggest issue is my love of food.  My doctor told me to lose weight.  I'm in my 30's but by then most of us are set in our ways about our food choices.  We know what we like and to pay someone (specifically our doctors) to tell us what we can and can not eat pushes us to do what we want to do...and in some cases when they say to eliminate something, that is the ticket item we crave.  I wasn't letting the doctor tell me. So since I love to cook, which by the way I have no culinary background, I decided to share my recipes and my nutrition findings in case anyone was interested.
     The Alternative Woman Cooks idea came from the fact that I like to come up with alternatives to our favorite foods.  Let's face it-the economy is tough.  Eating the way  we truly should cuts into most peoples pockets.  Some of us already work crazy hours and shifts and no one wants to take on another job just to support their food habits.  Sometimes it's subtle changes that can make a huge difference and put you on the path of eating a little bit healthier,losing a little weight and having a little more energy without having to put so much thought and effort into an already crazy lifestyle.  So I hope you enjoy.  Pass on the info.  Leave me feedback!
