Quick and easy Green Bean Almondine
So here is the absolute quickest and easiest side I have ever made. You want flavor but don't necessarily need the cream of the traditional green bean casserole:
What you need:
4 cups fresh green beans
1 clove of garlic
half an onion of your choice sliced
1/2 cup of sliced or slivered almonds
pepper to taste
1/2 tablespoon olive oil
1 cup low sodium chicken broth
In a pan heat olive oil. Toss in 1 clove of chopped garlic and half an onion. Stir frequently until onion begin to wilt a bit. Throw in green beans and stir until thoroughly blended. Pour in broth and cover to steam beans over medium heat for about 10 minutes or until tender. Toss in almonds. Then uncover for about 3 mins lowering heat. Ready to serve. It gets no easier than this and is delicious. Enjoy! Makes about 4 servings ( unless someone really loves these gorgeous green beans and gets greedy )
Last minute Sweet Potato Casserole
Here is another last minute dish for those holiday get togethers. At Thanksgiving and Christmas sweet potatoes make their seasonal debut. This can be made in record time for that last minute dinner invite. This serves easily 10, depending on that holiday appetite.
2 40oz cans of sweet potatoes drained
2 Tablespoons light brown sugar
4 whole grahams crackers
1/2 cup pecans
4 oz crushed pineapple (optional)
3 Tablespoons sweetened condensed milk
Handful of mini marshmallows
Take a baggie and dump in the sugar, graham crackers and pecans. Take one of your cans and use it like a rolling pin to crush the contents. Drain you sweet potatoes and put them in an oven safe dish or a foil pan (for quick clean up). Toss in crushed pineapple (optional). Spread sugar mixture over top of sweet potatoes. Drizzle with the condensed milk. Bake at 350 for 25-30 minutes. Sprinkle a handful of mini marshmallows on top for extra gooeyness.
